Indian Style Paprika Ricotta Pasta with Tomato

Here is a recipe for paprika ricotta pasta with tomato in Indian flavor:

Ingredients:

  • 8 ounces pasta of your choice
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 small tomato, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon salt
  • 1/2 cup ricotta cheese
  • Chopped fresh cilantro, for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the onion and sauté until it is translucent, about 5 minutes.
  3. Add the tomato and spices (paprika, cumin, coriander, turmeric, garam masala, and salt) to the pan and stir to combine. Cook for an additional 2-3 minutes, until the tomato has softened.
  4. Stir in the cooked pasta and the ricotta cheese. Cook for an additional 2-3 minutes, until the cheese has melted and everything is well combined.
  5. Garnish with chopped fresh cilantro, if desired, and serve hot. Enjoy!

  • 1 tablespoon Tomato paste
  • 1 cup Heavy Cream
  • 1/2 cup Chopped fresh cilantro, for garnish salt and pepper as needed

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large saucepan, combine the ricotta cheese, paprika, garam masala, cumin, turmeric, and cayenne pepper (if using). Cook over medium heat until the cheese is melted and the spices are fragrant, about 5 minutes.
  • Stir in the tomato puree and tomato paste. Add the heavy cream and bring the mixture to a simmer. Cook for an additional 5 minutes, or until the sauce has thickened.
  • Season with salt and pepper to taste.
  • Add the cooked pasta to the sauce and toss to coat.
  • Serve the pasta in bowls, garnished with chopped fresh cilantro. Enjoy!
